Geographically
rich resources in Xinjiang provide the great grape growing
regions of western China.
These regions have been recognized as competitive with the
appellations regions of Bordeaux and California, all located
around north latitude 44 degree.
Combination of tradition and modern
methods
During the period of the building of our winery, we introduced
modern wine-making equipment which has enabled us to make outstanding, clear, natural and
healthy non-pollution wines.
This modern equipment includes selecting system, distending
and crushing press, temperature-controlled fermentation, stainless steel tanks,
bottling line machinery, analysis and inspection instruments from France and
Italy.
Meanwhile, there are 3 automatic bottling lines of which 2
bottle at a rate of 7,000 bottles per hour while the other line bottles 4,000 bottles per hour. Recently,
we added another new machine with a rate of 15,000 bottles per
hour.
Pressing
Using our distending machines which are imported from France
and Italy, pressing by the bladder (airbag) press, which then assure our prestigious
cuvee.
Fermentation
Using the fermentation sets of Italy and adapting these
quality methods, provides a brilliant combination of equipment and
methodology.
Aging
We age our superior wines in French Oak barrels. Although it
may take time to do the process of filling, topping, racking, cleaning etc., we
understand the value of our this process in providing proper tannin and bringing a subtle
buttery vanilla taste to our wine.
